Ingredients For Butter Chicken:
Chicken:
Boneless chicken 750gm
Yogurt 4 Tbsp
Garlic (Lassan )paste 2 Tsp
Red Chilli (Laal Mirch) powder 1Tsp
Salt (Namak) 1 Tsp
Char Coal (Koyla) for smoke
Paste:
Whole Tomatoes (Timatar) 500gm
Chopped Onions (Piyaz) 1 Cup
Green Cardamom (Hari Elachi) 4-5pc
Jaggery (Gurh) 1 Tsp
Salt (Namak) ½ Tsp
Cumin seeds (Zeera) 1 Tsp
Coriander (Dhania) powder 1 Tsp
Red chilli (Laal Mirch) powder 2 Tsp or to taste
Gravy:
Melted Butter (Makhan) 4 Tbsp
Fresh Cream 100ml
Garnish:
Sliced Bullet Green Chillies as required
Garam Masala Powder to taste
Fresh Cream as required

Brother for gravy purpose you didn't add ginger and garlic paste, secondly if we cook cream for a while doesn't the cream splits? Is it okay to cook cream for longer span of time?
Hassaan I did add garlic paste to the chicken marinate hence I didnt feel the need to add in more ginger garlic paste for the gravy. You are right, when you cook fresh cream on high flame or for a long span of time the cream will split. Thats the indian dhabba style. It has a particular buttery aroma as the cream splits into milk solids and milk fat. This milk fat is the butter derived from the fresh cream. It has a slight different aroma than traditional butter as regular butter is derived from yogurt.
I personally prefer the 1st variant of butter chicken in which the cream is not cooked for too long. in the fancy variant The aroma of green cardamon and cream create a synergy of rich aroma and taste which I prefer more.
I need one clarification. You mentioned Tikka Masala in this recipe but you did not add it in video. And tikka / tandoori masala is also not listed in ingredients. Pls explain.

In some recipes a little amount of yogurt is added in gravy. What do you say?
I won't recommend adding yogurt. Butter chicken gravy is dairy and tomato based. We add dairy in the form of butter, cream and ghee, adding yogurt to it will make it a little too dairy based curry. I think the balance between tomatoes and dairy has to be maintained. That said, there are literally hundreds of different variations of butter chicken all around the world and im sure many use yogurt too. You can try!
How did you modify your stove?
search "orifice" on google images, its a copper fitting inside your stove, Its a very cheap part costing only Rs.12, you can find it at any hardware store, its readily available. Orifice has a tiny hole through which gas passes into the burner. Unscrew the old one and keep it safe in case your mod dont work. Take the new orfice and increase its hole size and install in the stove. Thats it. to drill a bigger hole I attach a sewing machine needle to a drill machine but it can be done by hand. After you increase the fuel intake now you have adjust the air fuel mixture just like you do in car. there is just this one screw near the orifice which you have to loosen slightly to make more space for air. Its pretty easy. Sound difficult here, but trust me its very easy.
The gravy was too sweet. And it didn't turn out to be as the one that is served in restaurants. Wasted my ingredients, time and energy.
