    Smokey tasty goodness right there! I like grits, grew up eating them too, hardly eat them anymore, but I do like them. Just something about cooking food over a fire makes it so much better. Great video brother!

    Love country ham! Love grits! LOVE red-eye gravy!!!! Growing up, it was a staple on our family table. Mama made biscuits every morning. When she cooked ham she divided the grease/drippings between eggs and red-eye gravy. (Back then home salt cured hams actually had fat on them. Enough for both purposes.) Buttered biscuits with strawberry preserves, scrambled eggs, hot coffee, and red-eye gravy. Nothing much better, IMO.
    FWIW, my version of breakfast grits. 1/4 cup Quick (5 min) Grits + 1 cup of water. Combine in a large (bigger than a cereal bowl) and microwave, on high, for 3 minutes. Stir in black pepper to taste and 2 slices of processed cheese. When melted, sprinkle top generously with grated sharp cheddar cheese. Then sprinkle on REAL bacon bits and imitation bacon bits/pieces. (Combo better than single of either type.) ENJOY! Experiment and modify to suit your own tastes.

    Love grits have them at least twice a week with eggs over easy & bacon. Never had redeye gravy before but I'm definately going to try it . Great Video Just started watching You Elkton,Md

    Yes red eye gravy on grits are the best and great in the winter in camp. From the south so I maybe bias.

    Hey Matt, searching through your videos and being from the south I had to watch this one and lo and behold I saw that Daniel Boone Inn ham! I have eaten there many times since was born and raised in the area but I'm betting your meal was just as good!

    I've got a pan that looks exactly like yours and love it.. very robust pan for not a lot of money and I also found one of those leather jobbies for the handle too, a great edition to make it easier to manage the pan. That looked like a real good meal, it's been a long time since I've had grits.. your video got me looking for some recipes, we don't get a lot of ready to cook grits on the shelves in the UK :D

    Mmmmm. A couple of over easy eggs on the top and you would be good for the whole day. I liked grits from the first time I had them. Wife can't see how I can eat them. Thank you for the video, Matt

    I don't know where you are, but grits and red eye gravy means you in the south. I've got some Daniel Boone Inn ham in my fridge. I'm in western NC. This is real southern cooking.
    Sure looks good. My tongue is about to beat my brains out, tryin' to get to them grits.

    I am not a big fan of grits myself, but polenta is similar and when I make it I add a lot of grated parm cheese. I am not positive what the difference is in the corn or the grind, but polenta just seems to be a much more appetizing form for me.

    Brilliant sir! This will DEFINITELY be on my menu this spring, top of the list! Never heard of red-eye gravy before and I’m from Oklahoma! Weird... but I love coffee, good coffee, I’m kind of a snob about it. I have a coffee grinder and Stanley adventure coffee press (Not the mountain version, it’s amazing if you haven’t seen it before)... but I’d have to use fresh ground beans and French pressed coffee to use when I try this out. Just a matter of principle! Lol....

    You don't have to brown flour in the drippings to make a roux and then add the liquid? I've never seen any gravy made without that browning flour step first.

    Question: is that just paracord you have on your toggle over the fire? You must have a really good feel for that fire because it looks like you are just about a foot over the flames. I would think that cordage would be melting in about 30 seconds. I’m from (way) up north and I never had a problem with grits. I’ll eat them any day. I think most people that don’t like them have a texture issue with them. You lost me at the coffee though. Can’t stand coffee.

      shaun davies grits are made from ground corn, as oatmeal is made from oats, don’t know if you have either were you are
