I've got the smaller, gas only Oouni. I've had good results letting it heat up to temperature, then switching the gas off altogether and letting the pizza cook with the heat on the stone and the residual heat in the oven. You get the super crispy base without excessive charring on the top.
@PMG999 that's what I was thinking. After it got to temp, you could lower the flames drastically or turn it off, both will take a little longer, but as demonstrated the risk of pizza fire goes from 0-100 in seconds.

If you want to go down the rabbit hole of making pizza dough. I highly recommend watching peddling pizza from the UK. He has his full recipe and, most importantly, the technique for making pizza dough. Most pizza chefs won't show all the little details, unless you buy their pizza making class. The difference between gas and wood/charcoal isn't really noticeable on these pizzas because they cook so fast in these ovens. Gas is easier and more convenient but wood is more fun and satisfies my inner cave man. If you're doing a roast you will have to use charcoal or wood to keep the heat lower. Check it but generally even on low the gas can be too high to roast. I've been making pizza at home for about 4 years and I'm still learning.
Inevest in a pizza twirler. It will make rotating the pizza's much easier. Also you'll notice the difference in flavor when cook with wood and coals! Love the content!

I used only the light bulb in the oven to proof bread and ferment yogurt. It gives off enough heat. (Or an Instant Pot on yogurt cycle). You could probably use the pizza oven to make roasted veggies like zucchini, eggplant, onions and carrots.
You remind me of one of the boys I went to high school with and he took cooking classes because he thought it was going to be an easy subject we all took pity on him and did his cooking for him.

Far out, Tim - You're a chef now? is there anything you can't do? you definitely need a taller table tho. you are much to tall to be using the pizza oven on a table like that. you need something at least 6ft high.....
