Easy Pasta with Italian Sausage and Homemade Sauce

- Hello! Been awhile since my last post.
Moved and have two youngins now so it's been hard but I'm hoping to get back into posting semi regularly.
This is one of those easier meals I make on a weeknight.
Note. Sauce is in no way "authentic", nor do I claim it is. Thank you.
I used to buy pre made sauce in the jar but I find it tastes better and is no more expensive (depending on brand maybe)
to whip up a quick homemade sauce myself. This one was /really/ easy - I usually do more fancy stuff but didn't have the ingredients or time this night. (Normally I'd add fresh garlic, fresh basil, unsalted stick butter at the end, etc).
Ingredients:
Can of San Marzano tomatoes
Can of crushed tomato
Italian seasoning, use your favorite
Salt
Pepper
Pasta
Italian Sausage
Brown the Italian sausage in your dutch oven or vessel of choice - try to use something that will develop a 'fond'.
Once browned, pull the sausage out, and add the San Marzano or crushed tomato
The goal is to de-glaze the pan with the liquid in the can
Once de-glazed add the other can and add your Italian seasoning
Let simmer, ideally at least 15-30 minutes, this will 'cook' the tomatoes a bit more and cut the 'bite'
While this is going get your pasta started
When the pasta is almost done, taste your sauce and season with salt and pepper to taste
If you like a chunky sauce just break up the big pieces with a spoon
We like it on the thinner side, so I use an immersion blender to blend it up
drain pasta and add to sauce, stir
plate! that's it. Super simple. This is in no way 'authentic' or fancy, just something I like to throw together on a weeknight.
I find I prefer this sauce to something pre made in the jar, especially when compared to the cheaper brands.
