I'm French, I live in a town where there are a lot of good bakeries, but I don't eat viennoiseries each day (I don't want to gain weight) so I just eat a crusty "pain au chocolat" with a coffee each Sunday morning (for breakfast).

Among other places where I've been to, I want to mention Yan Couvrer, Pierre Hermè cafè, Michalak cafè and Ritz Le comptoir. All very very high standard. I'd suggest the last two more for pastries than viennoiserie. I was amazed by the croissant by Couvrer, and especially Hermè where I had my most lightweight croissant ever, regular size though. RItz makes a uniquely shaped croissant but it is not my tea (the first time I went I didn't recognise the croissants at the counter). I also liked the Maison Carton.

Hello, when i was in Paris I passed his shop but didn't enter as I had a lot on my list, I would have spent a lot of time, so regarding your question how long to wait in order to get inside - I am not sure. When I tried his place in London I had no queue at all, just went to the Berkeley's hotel and got a table right away. :) Plus there is an open kitchen and if you go early perhaps can see bakers working. Do you know why: when i finish laminating the dough it looks good and you can see the butter/dough layers nicely.. and when i roll out the dough to cut the layers become less and less visible and they almost become one. I'm pretty sure it's not the temperature. I also roll it out carefully and don't apply too much pressure. (I saw your "do you do your lamination right?" video and you can still see the layers very well after unrolling. Is it much easier with a dough sheeter? do you have a tip? I was wondering if it would help if i make fewer levels? (i currently make 55 levels. 3 letter folds. french first fold.) sorry for asking so much. i hope its okee.. (my dream is making Good Croissants sooo yeeah 😂) thank you! :) have a nice day/evening

actually that’s not true !most really good high quality french pastries like cedric grolet or yann couvreur have very little sugar in them ,have you tried them? Are you american ? Maybe thats why you are used to overly sweet pastries instead of the delicious subtelty of real french pastries!
I see a little bit more in pastry craft than dumping ingredients in bowl, if you don't know how to do things even having a recipe won't work. Creativity, experience and dedication turns pastries into another level. I do respect a lot chefs like Yann Couvreur and what they create, I think if you eat a pastry to enjoy once in awhile, nothing happens. The problem starts when you replace your food with sweets. Sweets are treats. I would come back to Paris anytime to enjoy them but of course my day to day diet doesn't consist of that amount of sugar. Everything is about balance🙏🏻

Mainly trusting the locals who work in this field, connections, people who I follow and admire their work etc :))
