- I tried 8 bakeries in 3 days, insane! But I tasted some of the finest and delicious goods! For me, as a baker - it was inspiration, excitement and just a fresh look of how things are done elsewhere.

Hello, I did the same last year: croissants for 4 days (11 bakeries or so and 2 crepes in the evening). And I'm veg* too...
Anyway, I'm going to Paris this month and have already a list of new places where to go. This time more savoury....
next time i go to Paris I will do the same, more savoury options! This time was insane with sweets🙈

@@KrisKazlauskaite Hello, I'm back and alive. This time I had some vegetarian quiche.
Among other places where I've been to, I want to mention Yan Couvrer, Pierre Hermè cafè, Michalak cafè and Ritz Le comptoir. All very very high standard. I'd suggest the last two more for pastries than viennoiserie.
I was amazed by the croissant by Couvrer, and especially Hermè where I had my most lightweight croissant ever, regular size though. RItz makes a uniquely shaped croissant but it is not my tea (the first time I went I didn't recognise the croissants at the counter).
I also liked the Maison Carton.

I really must go to Paris and trying those croissant. Meanwhile, I'm gonna go to Italy next month, Bologna and Padua. Minimun target: 18 "pasticcerie" in 9 days
Ohh wow, something similar what I did in Paris😃 be careful though, I did some cleansing after the trip 🙈 anyways, would come back to Paris any time and would do the same and no regrets 🤓 enjoy your trip! thank you!

Hey! me again! ... Do you know why: when i finish laminating the dough it looks good and you can see the butter/dough layers nicely.. and when i roll out the dough to cut the layers become less and less visible and they almost become one. I'm pretty sure it's not the temperature. I also roll it out carefully and don't apply too much pressure. (I saw your "do you do your lamination right?" video and you can still see the layers very well after unrolling. Is it much easier with a dough sheeter? do you have a tip? I was wondering if it would help if i make fewer levels? (i currently make 55 levels. 3 letter folds. french first fold.) sorry for asking so much. i hope its okee.. (my dream is making Good Croissants sooo yeeah 😂) thank you! :) have a nice day/evening

They make their own, but not sure exactly what percentage of cacao content🙃
