how do u choose color before work!?

For colors I search it online on Pinterest, use online colour generator, pick colours from landscape images. Sometimes get some colors and start experimenting on it to create cool palette.

Yes, you can create it in Illustrator CS6. Free form gradient which I have used for sky in this tutorial will be not available in Illustrator CS6, so use radial gradient.
