What does the pastel do?

Pastel just washes out the color a bit. Depending on the combo, washing out is a good thing for things like Desert Ghost or Hypo, things that already clean up the look of the snake.

Yes it is known to also bring in yellows. But by itself this can "brown out" with age. In the right combos it can be great however!
