It's funny, I always find we end up with similar takes on equipment. I have an entry level machine that I've tinkered with (Delonghi EC680), and one of the first changes I made was changing to an IMS basket and shower screen. I personally tamp my puck, but I have a good friend who does the exact method you show (using the wedge) and I've always found his espressos to be tasty and consistent. Controversial or not, if it works, it works!
For €60,- I gave the gaggia a pid mod ( parts on Chinese webshop) The best invest in the gaggia so far, temprature surfing is not fun The IMS screen and basket are worth the investment also. Keep up the good work, like your hand drawn pictures in your video. Espresso is getting better and better. Thanks
