Amazing food vlog, its so alien to our western foods , some of those things i would probably not try but as you try them you can be surprised how good it is. The intestine on the lemon grass & Bugs & Rat , i believe i would try now i have seen this. Think the thing that i would avoid the most is the fish stool (Shrimp) thing. Really like your assessments of the food you eat , one of the best.! Being taken around the market is massive bonus being able to understand the ingredients . I remember so many times walking in Thai markets & not knowing what things were & since generally many market traders don't speak English makes it impossible. Look forward to more in Laos, will you be there while?

The pork in layers of banana leaves is not raw. It is cured minced pork, hence it is a cooked pork product by means of curing, the same curing that pork goes through to become Prosciutto except Laos cured pork is minced pork and not a whole cut of pork leg quarter.
Man! Watching you eating authentic Lao food makes me hungry. It’s not easy to find such menus in most restaurants. Great video!

So the river weed /seaweed dish that you said tastes like spinach…We actually use spinach to make that dish here in the States!
