    My Dad's only trade was as a butcher. He mourned the loss of the traditional wooden butcher's block, but stoically used the plastic anti-bacterial boards. On holiday in the Med, he would see wooden blocks still in use, and be upset. And then he also found out that the reason a wooden board is OK is that the wood remains a natural biocide. Suffice it to say, I only have wooden boards.

      The thing why in some parts of the world wooden cutting boards and wooden spoons are banned from professional use is that wood only has those amazing attributes if the board/spoon can dry through again after use and cleaning.
      In professional settings this might not be the case.
      While plastic can be hot washed even in industrial dishwashers.
      For home use wood is still a great option.

      To a high degree all the bacteria and germ fear is just that - fear - providing 1) choose the right wood & 2) you maintain your chopping/cutting board. I've had the same board for close to ten years with nearly daily use. Hot water and soap clean and allowed to dry after each use, occasional application of chopping board oil and the occasional sanding (if required to keep the surface flat). Take care.

      An old aluminum baking pan will be one of the softest metals you can get, and it's already cheap and readily available.

      Isn't titanium like 90 hrc too?

    • @lordirek1
      @lordirek1 7 дней назад +2

      @@brokeaffarming It is not. There are quite a few titanium bladed knives in the market, usually for niche things like dive knives, but they typically have a carbidized edge of some sort, a hard crystalline structure bonded to the edge. This allows the edge to maintain a cutting capability for a while, though typically more akin to a serrated edge. Titanium has one of the highest strength to weight ratios of the elements but it doesn't harden (it doesn't alloy with carbon or vanadium, as far as I'm aware, and this doesn't produce carbides which are what typically gives steel its hardness), so it is strong and tough, but not particularly hard. That said, this is my cursory understanding and a metallurgist would undoubtedly like all sorts of holes in my statements, but the bottom line is that titanium doesn't really have a hardening capability that's acceptable for knife edges.

    Ah, yes, I remember that trend for tempered glass cutting boards. Basically the same problem- they dull knives like crazy.
    I personally prefer HDPE cutting boards, the kind used in professional kitchens. They are quite sanitary, don’t dull knives as much as some other plastic boards, yet durable. Also they’re often quite big and heavy- they don’t slide around and have enough space for stuff you’re cutting. The price is also quite nice.

      Not the same problem, glass is actually much harder than hardened steel.

      Fun fact - when the first titanium paintball barrels hit the market, at night time practices (my home field had Wednesday and Friday night practice on the inflatable speedball fields under spotlights) you would see the occasional bits of spark coming from the end of the barrels. The oil on the outside of the paint would pick up tiny bits of dust, dirt, & debris (the area where the field was had really sandy soil) and as the paint flew down the barrel it would sometimes throw a few little sparks. It was really eerie at the time, as you don’t ever see anything like that with steel, aluminum, brass, or ceramic barrels. I think they must have changed something about the interior finish, because later generations of the same barrels didn’t do it.

We been using wooden boards for thousands of years so it must be safe, that’s why fish mongers and butchers back in the day used wooden boards/benches because of its anti bacterial properties in the wood that killed harmful bacteria but now have to use steel because of “hygiene” and “food safety” laws blah blah blah. It's not even made out of Titanium. Titanium makes bright white sparks, not bright yellow sparks. Judging by the sparks, it's probably a cheap steel with a decent carbon content (probably 1084 or some type of cheap stainless steel)** (that why it was hard). To be sure, you can try to anodise it and see what it does. Titanium is the only material that I know of that can be anodized with only electricity so that would tell us weater or not it is titanium.
    **Im refering to the wikipedia article about spark testing andf the parks look similar to their .5 to .85% C

    Titanium sparks are bright white and higly flammable. Also its quite hard to machine. So thats not even titanium.

    standard titanium hardness is 70+, that is way harder than most steels

    • @BughunterX
      @BughunterX 8 дней назад +9

      nope, pure titanium is way softer then hardened steel, therefore its rarely used for blades, even beta Titanium alloy is about 45 HRC.Maybe you ment Titanium nitide coating, this is bout 70 HRC. Nevertheless using metal as cutting board is never a good idea, even harder plastic or wood can dull a knife pretty fast

    Titanium weighs roughly 40% as much as steel. Its seems like its a low grade (chinesium) version, but its still probably 99% pure. Titanium is harder than steel and is extremely hard to work with, hence its high cost.
