    Audio on this clip is not loud enough and also needs to be equalized. Even with the volume turned all the way up, the quiet parts are way too low volume.

      I can hear it just fine with headphones in, which makes me think it is an audio mixing problem and not just a volume level thing.

    Love you Alton Brown, Your are one of the greatest in my opinion and your really intelligent and great personality. I really enjoyed your in depth knowledge of foods to eat with the 50 pound weight loss you did. Your the best and keep up the amazing work you do. It would be very interesting if you did a day in life eating of your healthy diet I know we will learn so much from you.

    Talking about grains, don't know if you would want to do an episode on this or not, but nutrition and protein bars would be interesting to learn about, especially ones we could make that don't taste nasty but still have nutritional value, or a focus on foods that would be high energy/nutrition. Those things can be overwhelming to figure out, especially since people don't have much time nowadays to figure out what can be really good nutritionally (other than the obvious eat fruit/veg/fish/nuts/water, etc). Things that are quick to grab and eat any time of the day that don't take a lot of time or money to prepare would be great-especially with some science behind it! (I realize this is a tall order, just a suggestion I'm throwing out there!) Thanks for you show, always enjoy watching it when I can!!

    Real quick prologue: I have an ep request if you don't mind: I've made a "Japanese style souffle pancake where you whip whites to stiff peaks and then fold in the flowered yolks. I have no idea how the foam doesn't collapse when you do this (fat + whipped whites = bad I thought), so I'd like to request some science and props to explain how it works... or I guess how it avoids not-working. I'll leave it to the expert with the sock puppet lol
    Anyway, I just got the season 16, and I am mega hype lol! I came across Good Eats when I was a kid, the forgot about it for years, and then re-e countered it as an adult that is trying to do adult things like feed myself.
    Your show inspired me to start cooking. It's super hard to know where to start, and it's easy to make mistakes and get discouraged. I really enjoy the show because it's fun, but really I appreciate the easy-to-understand yet not-too-watered-down science.
    The science is what makes cooking approachable. Without Good Eats, it's like "oh do this thing because the Wizard's spell book says so." But after Good Eats, it's like "I know what this is! Emulsions and lipoproteins!"
    I didn't cook anything like 2 months ago. Now I can make pancakes with egg white foam with the yolk folded in (related to above question).
    Thank you and everyone on the show for all the effort you put in, and I'm super excited to see all the new seasons in the future!

    So was talking about quinoa a little bit before ureback premiere episode. And well since ure episode i made it in my instant pot. I soo love I like it better than any rice Ive ever had. Soo ty Alton Brown. Had to change over to much healthier anyway.

    I'm holding you to your word to get back to amaranth in a later episode. Amaranth is the one I know very little about! Maybe you could include fonio, teff, spelt and kamut? Transitioning Sebian (alkaline vegan) here. But I'm not 100%, and even if I was, I'd still watch Alton for the entertainment and the education. ❤ you Alton!!

    Good promo clip, but your audio mix is too low. I couldn't hear you when you were mumbling at the start. Had to download it and up the audio mix in Premiere just to know you were talking about quinoa

    I cook quinoa in home made chicken broth with other spices in a rice cooker. Delicious if not over cooked.

    While it’s great to have you back :two things, sound people:please smoke the bowl AFTER you adjusted his mike and sound, then recheck when you come back in! Lol 😝 2nd: 1to 3 or 5 minute blurbs not cutting it for me. Full recipe or I squirt you in the eye with the most useless tool in the kitchen! Yup-the TURKEY BASTER! It’ll only fall on the floor so no eyes harmed 😁 will say I DO enjoy behind the scenes, again sound up n down but was waiting to see Alton laugh and what made him laugh BUT I COULDNT FREAKIN HEAR IT! Still enjoyed seeing him crack up coz I always wondered!!! Still a fan wanna watch but SOUND PEOPLE GET YOUR ACT TOGETHER OR A NEW CREW! Shudder gasp that’s so mean...nah the word is PROFFESSIONAL his show WAS...ahem...

    I never really liked the bite of quinoa, probably explains why I really love couscous. The soft texture reminds me of rice, which is something I'm trying to cut back on without feeling deprived.

    I hope Food Network has crawled out of last millennia and will be including new episodes on the RUclips channel. If they don't put them on RUclips, we'll end up pirating the episodes, which means lost ad revenue and viewership statistics. Just because we grew up watching on TV doesn't mean we're going to suddenly start watching TV again.

    My issue with quinoa is that it's a food staple in some parts of the world and native peoples are being deprived of it. The demand is so high they can't afford it anymore. It also strikes me as a food fad. I remember when it entered the public consciousness a few years ago. There was a mad rush to put it into everything. I hope demand has gone down to more reasonable levels. Is it still expensive on the store shelves?

      I've never seen it be expensive outside of stores like Whole Foods. In my regular grocery stores like HEB and Publix it's usually comparable to rice and other grains

    Just watched. Great episode, but you brought up an ingredient I have strong opinions about. What is your position on the purported health benefits of...COCONUT OIL?!
    Personally, I think the research is still too light and unreliable to claim that it's supposed heart-healthy traits are enough to counteract it's 92% saturated fat level. Knowing YOUR thoughts on this topic would go a long way to either solidify or change my opinion.

      It's just like any other oil, too much is bad. So the morons totting it is super good for you and you need to use it in everything are morons. The only way of counteracting high saturated fats is to cut back on them and also everyone's bodies process things differently as they adapted at a genetic level to handle different diets.
      For me eating quinoa is literally a painful thing, it does not digest well and gives me cramps and then gas on top of it so it is a no-go on my eating list. (And before you think I should have tried eating it longer, I tried for over a year on a daily basis thanks to my mother 10 years ago)

      Maybe its because I'm on a computer, but they audio is just fine for me. That said, there are volume boosting apps you can use if the audio on your phone sucks.

      @@naterivers6107 Thanks, but my phone gets loud enough. This video even plays loud except for the Alton interview recording. I'm guessing they only have that audio playing through one channel at full volume. Generally, phones aren't stereo.
