@@saladdays19 go to the top menu called "Effect" and go down to where it say "3D and Materials". There will be a pop up menu and at the bottom it says "3D (Classic)". You can also type it into the "Help" menu in the search bar and it will show you the location directly. Hope that helps!

To add more lines first select the desired grid tool then simply click on the artboard > a dialogue box will appear > increase the number of horizontal & vertical dividers > click ok .
There is another way and it looks great actually - Pick the rectangular grid tool - Draw a rectangle with as many lines and columns as you want - Select your grid to make it a SYMBOL (its the club icon on the right panel or your can go to WINDOW- SYMBOL) - Click NEW SYMBOL to save it (just add a name and click ok) - Make a circle, then with the DIRECT SELECTION TOOL (A) delete half of the circle - With your selected semi circle click EFFECT- 3D- REVOLVE - On the 3D revolve panel select MAP ART - Pick your symbol then hit SCALE TO FIT and INVISIBLE GEOMETRY and then ok - Choose your angles and pick, as a SURFACE, WIREFRAME - Now select your globe and click OBJECT- EXPAND APPEARANCE - Select your globe again and hit UNGROUP- UNGROUP- RELEASE CLIPPING MASK - Now you should have two faces of your globe, drag the top layer to the side and see the result

Allright so what I could find out was that the more anchor points a shape has, the more lines it has. You can increase the number of anchor points by going to Object > Path > Add Anchor points.
I've tried following the steps to make a wireframe torus but it doubles up all the lines and I'm not sure why. I've just set it to wireframe and 360 degrees rotation...
If you're using Illustrator 2022 btw, the menu to do the third graphic is Effect > 3D and Materials > 3D (Classic) > Revolve (Classic)
