    When I was a child, a local fancy restaurant had a wonderful chocolate cheesecake - this may be what I remember! Not too sweet - tangy and creamy.

    I made this and it was delicious! So rich and chocolatey. I did reduce the baking temperature to 170C to avoid too much cracking at the top. Thanks for the recipe!

    Oh my God! That trick with the bottom of the pan is amazing! I've never thought of that and if I knew few days ago.. Anyways I bought your book and I'm anxious to receive it when it gets out 🙂 I love what you do! And above that you're irish and I love irish people as much as I love Ireland!

    Well another trick to keep the bottom clean is to use a circle of parchment paper that you can make, by putting the 9 inch pan on the paper and using pencil or sharp pen and cutting that big circle to put into the pan before adding the mix

    Omg Gemma, this looks delish… ok going to do this one never did a chocolate cheesecake and using Oreos, ahh yum. I have done plenty times pumpkin cheesecake and my favorite strawberry cheesecake. So this will probably be on the list. Thanks always Gemma ❤️❤️

    Pro tip: never flip the bottom of the pan if you are making crust less quiche…..leaves quite a mess in the oven 😂

      Yes, you can use yogurt. But use a full fat yogurt or a GReek yogurt, to get the best result. Hope this helps.

    I have never seen sour-cream that thick before. I am gonna run to store right now to get these ingredients. I assume all I need to do with the sour cream is hang it in some cheese cloth ? Yes/No? Thank you for sharing this, I cannot wait.

      Look for sour cream with full fat or one that’s made of heavy cream. It’s lovely.

    Hello Gemma, I made your cheesecake for our family dinner and I misread the directions and use 100% chocolate and it turned out way to bitter. I’ll make sure to use 70% next time. Do you recommend anything I can do to sweeten it up? Thankfully you Millionaire Shortbread was a hit.

    Is 180 ok for fan forced oven? All my ovens are fan forced but recipes don't seem to mention any adjustment these days

      Hi Kate. No, it’s conventional oven standard, with fan off. If you are using a convection oven to make this, lower the baking temperature by 30F / 10C and use bottom heating only. I hope this helps.

    Wow that new mixer has an unpleasant sound doesn’t it! What brand is it? I need to make sure I never buy one. With my hyperacusis that would cause me big problems.
    Btw, it’s only called a K beater on Kenwood mixers. K for Kenwood 😁 I’m planning to get a Kenwood at this point as they seem to be the quietest and the noise of the motor doesn’t hit the pitch that hurts my ears. Congrats on the new book. It looks great.

      Hi Karuna. The eggs in this recipe helps with the structure of the bake. You can try using flax eggs, but the result might be too significantly different in flavor and texture, aside from the structure.
