Well another trick to keep the bottom clean is to use a circle of parchment paper that you can make, by putting the 9 inch pan on the paper and using pencil or sharp pen and cutting that big circle to put into the pan before adding the mix

Hi Kate. No, it’s conventional oven standard, with fan off. If you are using a convection oven to make this, lower the baking temperature by 30F / 10C and use bottom heating only. I hope this helps.

Wow that new mixer has an unpleasant sound doesn’t it! What brand is it? I need to make sure I never buy one. With my hyperacusis that would cause me big problems. Btw, it’s only called a K beater on Kenwood mixers. K for Kenwood 😁 I’m planning to get a Kenwood at this point as they seem to be the quietest and the noise of the motor doesn’t hit the pitch that hurts my ears. Congrats on the new book. Is 180 ok for fan forced oven? All my ovens are fan forced but recipes don't seem to mention any adjustment these days
