One simple method is to display all the seven EUR pairs and choose the strongest currency against EUR and the weakest currency against the EUR. The advantage of using the EUR is that it is always the base currency. Super simple. You display all seven pairs on the same page with daily bars so you can see directly which currency is weakest against the EUR and which one is the strongest against the EUR from the Tokyo session and then you use the pair with the strongest and the weakest.
