Fun thing to note, this was the first song that Lin-Manuel wrote for this movie. And he wrote it because he wanted there to be 12 family members. The producers and directors wanted to change it to only 4 so that it’d be easier for audiences to remember them and they’d have proper introductions and characters arcs. But Lin basically said “Hold my beer” and then wrote this absolute masterpiece. He took inspiration from the song with all the townspeople in Beauty and the Beast.
Whoever said that about the doors is a bit confused; the picture on the doors is the same as their current age. Most of the characters are already teens and adults, but Antonio gets his door during the film and it's just his adorable five-year-old self. :) Presumably the image ages along with them.

You’re wrong, man. The pictures next to Abuela’s door shows them all getting their doors, and in there the door were already showing their older selves. My theory is that it’s like that because they had to act as how Abuela wanted them to be, not letting them be children for a while. Also, no one asked about my theory, sorry. XD
"Casita" means "Little House" in an endearing, affectionate way. In Spanish "ita" (fem) and "ito" (masc) can affixed to the ends of names and nouns, replacing any trailing vowel at the end of such words, as a way of attaching a connotation of endearing smallness and cuteness to the thing or person. So for example a Spanish-speaking mother with a daughter properly named "Rosa" might affectionately call her "Rosita".
One thing I really like about this song is in the background vocals. Like when Isabel and Luisa are introduced the background vocals sing their names in a way that represents their personalities. Slow and beautiful for Isabella and hard and quick for Louisa.
When Antonio gets his gift, it's his current 5 year old self. My theory is that as the kids age, the likeness on their doors age as well. After all, the house is magic, so it's as simple an explanation as any.
An interesting part of the song is where she sings "her mood affects the weather" it's followed by a thunderclap that mirrors the door knock by Mirabelle in the first verse.

I've also seen people theorize that Antonio's door is different because Mirabel was helping him, essentially making it Mirabel's first door.
