    I imagine layering flavors so you can have the same effect as a layered drink, such as a tequila sunrise. How you lick it would determine the order you experience the different layers in, so it could be used to create whole new drinks. Also, you could take a small lime juice popsicle, quickly dip it in tequila, lick it and then lick the salt off your hand. Other types of and new kinds of shooters could use the same basic approach. A quick dip in liquor might also allow for flambeau style popsicle drinks.

      Dairy would definitely change the equation since they don't freeze well, would be fun to do though!

    I am definetly making an Old Fashion. Specifically, I am going to fat wash some Bourbon with some smoked Wagyu Beeg Tallow and then make a popsicle with it, some Fabbri Amerena deli paste and Angoustara Bitters. Serve it by spritizing some orange essential oil amd bourbon with an aeresol sprayer.

    I think a Mai Tai or other tiki-style drinks might be fun... although you'd have to dial back the alcohol significantly. Pina colada would be simple and tasty for summer.

    Cantarito- Citrus Mexican cocktail(tequila, orange juice, lemon juice, lime juice, grapefruit soda) instead of using grapefruit soda I was thinking of substituting it with homemade grapefruit kombucha to add bit of depth of flavor.

    I would like to try this with a Mule. I like the mules using the Ketel One Botanicals Vodka, specifically the Peach and Orange Blossom!

    This is such a fun project to make! A bourbon old fashion would be a surprise treat or any of the flavored margaritas. Really because I love the idea of garnishing with the traditional rim salt/sugar. Great idea, I can’t wait to try these!!!

    In the spirit of "Pride Month" I'll keep it sweet and simple by creating a vibrant rainbow colors of adult fruit cocktails in 1 popsicle mode or Disposable Ice Popsicle Mold Bags.
    Adult Lemonades of one alcohol spirit along with different colors and fruit would be a safe start, this way there's no combination of alcohols clashing & causing illness:)

    There is a cocktail called the “Laphroaig Project” cocktail from Bourbon and Branch in San Francisco.
    It is Smokey and citrusy. I am really curious how it would be as a popsicle.

      Oh yeah, after seeing your more fruit based popsicle recipes. I’m curious how would a popsicle do with dairy added? Something like a “White Russian” or a coffee style cocktail?
      Would the dairy separate somehow?

      Adding dairy to a popsicle would definitely require a change in technique since freezing straight cream wouldn't be very tasty

    Please I need an alternative for the polysorbate 80 as there are some safety concerns. i have your sunflower lecithin that emulsifies but it would change the flavor i guess?

      Lecithin would not work in this recipe because of the HLB value and also it doesn't have an effect on meltability like polysorbate.
