I have so always enjoyed the things that you have done regarding River Cottage and thank you for that. On the other hand these 2 to 4 minute clips of this or that recipe though informative do not allow for the same personal connection or build the same appreciation. Hope you are doing well. We miss you.

The first time I tried this recipe, I followed it as stated. When I separated the juice/pulp from the skins/seeds, the skins I threw away were all sticky with sugar. What a waste. The second time I did it, I cooked the berries in water without sugar. Then I separated the the juice/pulp from the skins/seeds with a food mill. After I composted the skins/seeds, I added the sugar to the juice/pulp while it was still warm. It dissolved fine and was more efficient.

I don't even know where to get gooseberrys in the US but I imagine passionfruit may be a good substitute?
