They do different things- corn starch doesn’t act as a leavening but can affect texture to create a more tender bite (does not affect how your cookies rise or spread as much), but ratio is everything- lots of testing needs to be done! One of my recipes uses powdered sugar which contains some corn starch and I also have a recipe with some corn starch to help smooth out the dough a bit.

What are your thoughts on using cornstarch instead of baking powder? I really want to hear a professional seasoning opinion on this one.
