    Great information!!! I started out with measuring cups but now I weigh everything--I think it's easier anyway. Your explanation about baking soda and baking powder was so very helpful--I didn't know any of that. Love your videos.

    What are your thoughts on using cornstarch instead of baking powder? I really want to hear a professional seasoning opinion on this one.

      They do different things- corn starch doesn’t act as a leavening but can affect texture to create a more tender bite (does not affect how your cookies rise or spread as much), but ratio is everything- lots of testing needs to be done! One of my recipes uses powdered sugar which contains some corn starch and I also have a recipe with some corn starch to help smooth out the dough a bit.
