I made these and they taste great, look amazing but... mine won't melt so pretty, I get little pieces of chocolate in there which makes it look as if it has curdled :( any idea why this happens? 🤔

Hi. The alcohol wouldn't be reduced much following the instructions I've posted because the Bailey's isn't heated for long. If you'd like to reduce the alcohol more, heating it longer will do the trick. Just be sure to keep it at a simmer. Hope thus helps!
It can be done either way. Heating this way doesn't evaporate the alcohol much since it's heated for a short time. You definitely still get the alcohol in this version 😅

Hi! No. The Bailey's and cream is only heated until you get a slight boil, so it's not cooking long enough to reduce the alcohol.

I prefer to melt the chocolate not the bailey’s so alcohol doesn’t evaporate.
In the method I use, the Bailey's isn't heated long enough to evaporate the alcohol. So either way will work 😉
