Since you increase the area but not add more orange material to that area, there is naturally a white hole in the between.

For the illusions about rearranging and replacing: It's all about the gradients of the shapes. The triangles or quadrilaterals have different gradients therefore when you rearrange them, the shape cannot fill the space in the same way as it doesn't have the same gradient. The power of maths.
