You can definitely do it that way. I find that you run the risk of it coming out gamey that way so I like to add some garlic and sour orange to help that

Yep!!! You hit the nail right on the head. I like to render down the natural fat from when I de-bone the pernil vs. buying the tubs of lard. It just never sit well with me lol. Thank you so much for watching!

Hi! I just found your channel and I am so happy I can't even tell you. I lived in Miami for 7 years in a Cuban household and I fell in love with the culture but especially the food. I did have one question for you, though. In the household I was in they used olive oil for everything, especially mojo. Is there a reason you use a different oil or is that just a personal preference? Keep being awesome! Thanks.
You generally do not want to use olive oil for frying as it has the lowest smoke point of all the cooking oils and will smoke and burn easily. Olive oil is for eating fresh. Vegetable oils are for frying.
Hey!!! Love the recipe! Im actually trying it RIGHT NOW! It seems though that i added too much oil, I’m guessing that is why the water won’t evaporate! 😬 I doubt you’ll see this but if you do I’d love to know how to save the dish!!

Chef Zee, why didn’t you just add the onion to the pan that you cooked the pork in to pick up some of the fond? It would have been one less pan to clean. Or is that breaking a Cuban rule? I think I will make this with pork riblets. Thanks!
That’s exactly how I make my carne De cerdo frita . Love it that way specially el cuero ( la piel)! Never made mojo but I’ll try it next time.🤤🤤 thank you for sharing your recipe 😘
I marinate my pork the exact same way but I put ham seasoning in it and I fry it in Bacon fat from the morning which is basically the same thing as lard and it comes out tasting like bacon that's also how I fried pork skins

Thank you!!! You can adobo if you like! I rarely use adobo because I usually make my own or use Kosher Salt or Pink Himalayan Salt. Any of these will do. With this dish, the garlic, sour oranges, and oregano are so bold that you gives the dish so much flavor which is why regular salt worked just fine. But again, you can use whatever you have on hand. You can use a pressure cooker to cook the meat. It will cook and make it tender. Then fry it on a stove. ❤

There's no substitute. I'm sure they'll still taste good even though you omit the citrus.
