Let's put it this way, a chef with a set of specialty knives is way more productive and creative in his work. It is not just a way of cutting but how and when to cut certain bits of the meat or vege. Giving results he can visualize better and faster.
the biggest change for me was how using a custom keyboard greatly increased the amount that I enjoy working on projects and typing, thus indirectly improving productivity beyond the tangible sense.
For me a huge factor is the fact that I enjoy using my custom keyboard so much more than standard keyboards that I am looking forward to every email or other stuff that I can get done with my keyboard. That boosts my mood and therefore my productivity. I find joy in every keypress. And of course everything else you mentioned.
I think people underestimate the benefit of a lower-latency mouse for snapping to buttons and controls more accurately. Just like the accuracy and comfort of a good keyboard means fewer errors and hence time and frustration are saved. All the little things that make work more pleasant and less fatiguing are huge for motivation in the long run.

One of the things that custom keyboards taught me is what some of the keys like the function keys or Home and End do. This has helped my productivity across all keyboards now.
My "workaround"😅 to the Spacebar layer delay is to use a keyboard with a split space bar, which allows me to put the one that toggles function on a different key. Mainly the one in between the 2 spacebars. Reachable with either hand.
I prefer to switch my caps lock to be a function layer and use the vim movement keys, and then add some custom macros on that layer for keys that regularly require multiple modifiers. Helps speed things up a lot since caps lock is super easy to hit and you lose basically no functionality because you can just use shift.
I use the spacebar as a layer switch when held using tapdance in VIAL. I don't know about VIA (I don't think they have an interface for tapdance configuration) but in VIAL you can set the delay time really low so it doesn't interfere with normal typing. You do however have to be really quick when using spacebar, so you don't accidentally switch layers.
Agreed, SpaceFN is perhaps the best new idea in "keyboarding" in the last 10-15 years. Makes so much sense. Like now when I'm typing on a keyboard with the arrow cluster, my laptop for example, I get annoyed that I have to move my hand just to use them. On my regular 60% it's just hold space with your thumb and then IJKL. Space+Backspace for Delete is also something that just feels so right.

If you're not familiar with coding and qmk it's a much better way to use things like combo keys (eg. q+tab=esc), tap dance, creating macros and even more. However, I think the one place that is lacking is the documentation for VIAL as there was some personal confusion while trying to create macros within it.

I think the most important issue of productivity that a mechanical keyboard addresses is the desire to work on things. I've had papers or assignments for work that I was dreading, but the knowledge that I could use a "nice" keyboard to work on it and still have some fun was enough to motivate me. Because I enjoyed the act of writing, I was infinitely more productive than I would have been on a shitty membrane that didn't inspire me to write.
This right here! I work as a technical writer and having a keyboard that looks and feels nice makes me a lot more motivated to work. It's fun having multiple boards too so I have separate ones for the office and at home, and it's like meeting an old friend when I do go into the office
