A dish from the Roman Empire

  • This sausage and beans casserole takes the classic recipe into new direction seeking to showcase an ancient produce of the Umbrian land. The presidium Slow Food of the Fagiolini del Trasimeno (Tiny beans of lake Trasimeno) are cooked with some local sausages accompanied by another Slow Food presidium with the Moraiolo Extra Virgin Olive Oil from Passo della Palomba (My parents' olive oil farm). This is a super easy recipe for a wholesome earthy meal that has comfort food written all over it.
    This is an ancient recipe with ancient ingredients, and while these beans can be hard to find, you can substitute them with lentils. Lentils when cooked in this same way will give you another amazing dish and are great to accompany some Italian sausage!

    160g PFagiolini del Trasimeno or Lentils
    4 Sausages...Italian of course!
    1 Large carrot
    2 Shallots
    2 Stems of Celery
    Chilli, salt and pepper to taste
    Herbs: Sage, thyme, marjoram, rosemary or whatever you like

    Shouldn't use chilies for an ancient dish. All chilies are from the new world. Or just do whatever you like, it's fine.

      @@GetCooking Yeah, but Italians usually complain about how the world messes up their recipes, so it feels nice to complain back. (I know this doesn't always come across in text, but I mean this in a light-hearted way.)
