Rhubarb Muffins

  • This isn't a typical muffin flavor, but it should be! Rhubarb muffins are super moist, which comes in part from the liquid in the rhubarb. Topped with a cinnamon and walnut crumble, this recipe is sure to feel like the epitome of spring!

    FOR THE BATTER
    - 1 egg
    - 1 1/4 cup brown sugar
    - 1 cup buttermilk
    - 1/2 cup (1 stick) browned butter, slightly cooled
    - 1 teaspoon vanilla
    - 2 1/2 cups flour
    - 1 teaspoon baking soda
    - 1 teaspoon baking powder
    - 1/2 teaspoon salt
    - 2 cups diced rhubarb
    - 1/4 cup chopped candied ginger
    FOR THE CRUMBLE TOPPING
    - 1/3 cup brown sugar
    - 1/4 cup flour
    - 1 teaspoon cinnamon
    - 4 tablespoons cold butter, cut in small pieces
    - 1/4 cup chopped walnuts
    INSTRUCTIONS
    Preheat oven to 350 degrees.
    Beat the egg and sugar until combined. Mix in buttermilk, cooled browned butter, and vanilla. Add flour, baking soda, baking powder, and salt. Mix until no streaks remain. Fold in rhubarb and ginger.
    Fill greased muffin cups with approximately 1/4 cup batter.
    Prepare topping by mixing brown sugar, flour, cinnamon, and butter. Mix until the texture of wet sand. Add walnuts.
    Top each muffin with crumble, about 1-2 tablespoons.
    Place in oven and bake until the muffins dome and a wooden skewer comes out clean when pierced in the middle, about 16-22 minutes.
    Remove from oven and cool in the pan for five minutes. Then remove and cool on a rack.

    Oh wow so I tried baking these muffins using my rhubarb harvest, but with candied orange peels and sucanat sugar instead of brown...and they are amazing!!! The candied orange peels add a nice twist! And you are right, the walnuts make such a difference! I didn't brown the butter enough. I also added chopped fresh strawberries. Just amazing! I ate three right after baking!! Yum! Thanks Kaleb!

    Awesome looking rhubarb muffins, Kaleb. I am definitely going to make these when my rhubarb is ready. We are 3 weeks behind in our growing season where I am, due to a very cold spring. It actually snowed here 2 days ago. I can't wait to try these scrumptious beauties out. Thanks!!!

    if it tastes anything like your rhubarb crumble, then I know it will be delish. definitely going to try these for my friends at work. i might even try blueberry rhubarb or strawberry rhubarb. thanks kaleb for always having wonderful recipes.

    Another absolutely delightful receipe....thanks Kaleb....you are so sweet and so thoughful!!!! Always giving Humanity excellent time saving techniques on how to use the scoop to put the muffin mixture in the pan etc!!!! Everyone loved my Ruhbarb blueberry Jam I made for them....it looked so beautiful cause you had recommended at Red Food Coloring to real emphasis the color development!!!     What a delicious looking muffin, I love rhubarb as well, my fav treat to bake is strawberry rhubarb pie........I don't have a garden, but I always go to my local Farmers Market and pick out the best rhubarb.......thanks for sharing Kaleb :)

    Instead of buttermilk, can i just use milk? Instead of candied ginger, can I use candied orange peels? Thanks.

    I’ve been eating rhubarb my entire life, and love trying new recipes. However, I noticed that you cut the rhubarb when you harvested it. You should never do that, because you could kill the plant.The part of the rhubarb that you didn’t get, will die and rot. You always hold each stalk at the base, twist and pull each piece from the root. This will ensure a healthy rhubarb plant. God Bless!! :)

      I used to cut for years but they did not die. Each year I had new ones. But this year I did read about pulling and twisting them out rather than cutting so I did it the right way now. :)

    Ok Kaleb , master of rhubarb :) Last week in NE Iowa we had an overnight frost. I had read online that if your rhubarb leaves get too cold in a frost, their leaves will shrivel and they can potentially contaminate the stalks making them poisonous. Any experience with this? My rhubarb patch looks ok....but some of the leaves are yellowing slightly and just don't look as lush and green as they did. Should I cut it back just to be safe? :)

      +Sarah Taylor hmmm wow I have never heard this, I can say I have had rhubarb freeze and I still use it after it continues to grow. But cutting it back could be a good safety check.
