Spaghetti Squash in a Romesco Sauce = the Perfect Weeknight Dinner

    Roasted spaghetti squash served with a bright, nutty romesco sauce
    Ingredients:
    2 spaghetti squash
    1/2 cup plus 2 tablespoons olive oil
    1/2 cup chopped walnuts
    1 garlic clove, sliced
    16 oz roasted red peppers, drained
    1 slice of bread, toasted
    1 red pepper flake packet (or 1/2 teaspoon)
    1 teaspoon smoked paprika
    Salt and pepper
    1/4 cup red wine vinegar
    2 tablespoons chopped fresh parsley
    Steps:
    1. Preheat the oven to 400 degrees F.
    2. Cut both ends off of the spaghetti squash. Cut into 1-inch rings. Arrange the rings on a sheet tray, drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Bake for 35-40 minutes.
    3. Heat a small skillet over medium heat and add the walnuts, shaking the pan to toast for 3-4 minutes. Set aside.
    4. Blitz the garlic and roasted red peppers in a medium bowl with an immersion blender. Add the walnuts and blend until a paste-like consistency is achieved. Cut the bread into small pieces and add to the bowl, along with the red pepper flakes and smoked paprika. Blend until smooth.
    5. Slowly add 1/2 cup of olive oil in a steady stream while blending. Stir in red wine vinegar and season with salt and pepper.
    6. Remove the spaghetti squash from the oven. Using a fork, scrape the flesh into a bowl. Discard the skin and seeds. Toss the spaghetti squash strands with the Romesco sauce. Garnish with parsley.
    7. Cooks Note: If you are using a regular blender or food processor, add the red peppers, garlic and walnuts and blend until it forms a paste. Then add the bread and spices and continue blending. Drizzle in the olive oil while blending. Then add the vinegar and blend until smooth.
    8. Spaghetti squash can also be prepared by cutting the squash in half, removing the seeds, drizzling the inside with olive oil, salt and pepper and roasting cut side down on a baking sheet.

    FYI, I have yet to meet an immersion blender that won't fit in a wide mouth quart jar. Cuts down on the mess of a bowl. :)

      Walmart seems to carry them! Don't know about yours but that might be a good place to start :)

    I use a spoon rest or a small saucer to put my utensils on as I cook, including immersion blender, spoons, tongs, spatula, etc...

    I'm way behind the curve on romesco sauce. I only just discovered it about two years ago but I LOVE it! And I can definitely see how well it would meld with spaghetti squash (my #1 alternative to spaghetti). Prepping my immersion blender as I type! Thanks, Frankie!

    OOOOKaaay! I gave up on spaghetti squash because I couldn’t come up with a sauce that made it taste any good. I now feel challenged to give this recipe a try and hopefully, it’ll taste good because - it looks good!

    I am going to try this, but I want to roast my own peppers. I’m sure it’ll still be delicious. Definitely will try with the jar version too.
    I ate meat most of my life, but I became a vegetarian after getting hit by a tractor trailer because of the affects of animal protein on the body and the digestion system.
    I do not miss animal protein at all. I actually love being a vegetarian. It really helps with the physical body. Recipes like this make it easy.
    Frankie, thanks for sharing you lighthearted, free spirited energy and delicious recipes. I’ve made several! You’re a high Vibrational person and we need MORE people who exclude this energy!

    Ooh! Picked up spaghetti squash for 19¢/lb at my local Aldi, and are it with butter and Parmesan, but it was meh. I’ll have to try this!

      Any other vinegar, or at the worst case: something acidic like lemon juice. Or you know, tomatoes.

    I don’t think this company understands what an actual “struggle meal” is. These are more affordable versions of meals that are typically quite expensive. That is NOT what a struggle meal is and it’s honestly quite offensive. “Struggle meal” is something that you scrape together because you are essentially out of options and completely broke. It’s something like using smashed up Cheetos to bread chicken because that’s what you have and you have no other options. People who are struggling aren’t necessarily going to have the option to buy these ingredients. Cool idea but really poor and disappointing naming.
