I tried this yesterday, when you have the back and the side burners on like he said the temp will be around 450. if you just have the back burner and no burning wood the temp will be at 300, you can have both the back and the side burners on, but both should be on low and the temp will be around 300. total cooking time under 2 hours.
Your one of my favorite chefs to learn bbq from. Thanks for the videos and advice, you have changed the way my family eats.
