Seeing some confusion in the comments regarding how to tell apart the two sexes when choosing, so I thought I'd pop in and mention; looking at the avatar's clothes, you can see that the female avatars have a black singlet or bra on, which can be seen through the tattered shirt. The male avatars don't have this. The clothes are easier to see once the avatar stands up, meaning it's easier to tell the difference, but you can still see a bit of the singlet/bra when the character is sat down, you just have to look closer. Hope this helps!

The eyebrows, shorts, and hip sizes also distinguish them. The default shorts are still gender-locked even though the rest of the legwear isn't, so the girls have much shorter default shorts than the boys, and also wider hips (which gets easier to notice later on). And eyebrows are also distinct between the two, even with them now being customizable, the options are still different for each.

I also noticed something else too,
the females are on the left while the males are on the right. so, if you were to choose a female octoling/inkling you would pick the left, were as if you wanted a male octoling/inkling you would pick the right

The outlines of the eyes too, for the octoling:
The female octoling has a spike at the bottom of their eyes, while the male doesn't.

*How to make your Splatoon 3 character! ALL OPTIONS IN ORDER*
_Species and Gender_
You can choose any species and gender for your splatoon character (Inkling and Octoling, Feminine and Masculine)
_Skintone_
You can choose any skintone
_Eye color_
Your character can have any eye color
_Hairstyle_
You can pick any hairstyle for your inkling except for pigtails, but Megalobraid, Bedhead, Hippie, Haircut, Wave, Double Bun, Hipster and Banger can fit for feminines and Cornrows, Soaked, Topknot, Slick, Buzz-Cut, Spiky-Haired and Mushcut are hairstyles for masculines. Pigtails must be replaced with Wave. An emo-fitting hairstyle is Spiky-Haired.
Any hairstyle can be picked for octolings. The fitting feminine hairstyles are Tentatwists, Octolocks, Tentacurl and Pony, while hairstyles that can fit a masculine are Fade and Afro. Don't pick the fade hair, aswell as an afro hair, unless you love disco dancers
_Brows_
It can be any brows for your character.

I'm seeing a lot of comments abt whether things are boy/girl, but I'm fairly certain they didn't make the characters have specific masc/fem traights so that they'd be more androgynous to those who might want to have certain traights to their character without the game labeling it as one or the other

Aw man. I wish there were long hairstyles for Octolings. I wanted to pick them, but I'm not a huge fan of short hair. Long braids for Octolings would look so good.

doesn't really matter if you pick the wrong one since you can always customize your ink/octoling again later

You can always come back to this menu and change it all. There is also a quick menu next to the weapon/cloth equipment that lets you change the hair and pants.

Quick tip: If you want to quickly change species, use two different Splatoon amiibos to save one Inkling and one Octoling.

No silly, the outline of the eyes for octolings differ. And so do the voices, and the female wears a bra as you can see while she's standing up. And the eyebrows are a bit different.
