That's a good question. The Chef's Choice 838 Waffle Cone Express is awesome for home use, but for a bustling business, you'd probably need a heavy-duty, commercial-grade waffle cone maker.

instead of pushing the waffle into the bowl, flip the bowl and place waffle on top to create the bowl shape :)

You could probably make crepes keep the temp low, maybe even shorten the cooking time, and find the right recipe.
