  • Hello everyone, for Women's Day we bring you a very special mimosa cake: the MIMOSA BUTTERFLY CAKE !! It is a cake born in the fifties in Rieti (Lazio) to celebrate March 8, precisely women's day. It is a cake with delicate flavors and has the particularity of being sprinkled along the edges with pieces of sponge cake. Today we present our version with the SHAPE of a BUTTERFLY!

    500g of mascarpone
    250ml of fresh whipping cream
    120g vanilla powdered sugar
    the peel of 2 organic oranges

    180ml of water
    30g of sugar
    the peel of 2 organic oranges
    Boil for 5 min
    WINGS:
    200g of melted white chocolate
    silver pearls
    crumbled sponge cake

    20g of dark chocolate
    DECORATION 4:55
    fruit to taste

    *COOKING (Sponge cake): 180°C static oven for 30, 35min; the toothpick test is important*
