I'm not sure if the variety you're using right now is just for making luffa but usually there's a different variety in south India which we use to make curry and pickles. It tasts really yummy too

The loofahs, we call them torai in India and it makes an excellent curry vegetable with potatoes and onion with spices when they're tender. Do try it.
