ok, so a vellum constraints node with "pin to target" with the root group from the groupexpression used in the video applied before the vellum solver did the trick for me ^^' Pin type: permanent; orientation pin type: soft with "Match Animation" ticked on ✨
Ok, found it, he created a geo node and give it the name of hair. For someone new to Houdini as me, jumping that step might be confusing and frustrating

how do I let hair collide with other objects
Feed geometry (what you want to collide) into the Collision input of the Vellum nodes
