Chef Tom and Chef John (Food Wishes) giving almost identical lessons in bacon wrapping and roulade-ing. What a day!
Was at the butcher, they had tri tip on sale. I decided why not try the roulade. Same recipe, but beef targeted seasonings, and provolone instead of Swiss. So good.
Btw the family likes the weaved bacon better. Happy cooking Chef Tom

Only thing that would make this better is a great gravy to go over the slices
Try using cling film for rolling.. easy to compress and get the roll tightly rolled up

I was thinking about making a de-boned turkey this thanksgiving, but now I'm thinking about making this instead. That looked incredible, but I think I'll be using apple juice in my brine rather than a lemon base..... Good stuff man! Cheers!

hey chef tom, can the brine liquid be used for anything afterwards? i.e bring it to a boil to kill off the bacteria and make a slurry to thicken it?
I was thinking the same thing myself. Maybe a gravy or glaze with some of it. What a waste to not use it!

Everything good takes practice - but this looks like it could easily turn into a messy disaster during assembly. Chef Tom is making it look easy - but I think we'd be better served, on this recipe, by leaving in all the stumbles that turned into out-takes.
And Chef Tom - that's a better weave than any of the ones Oprah has ever worn!
