In this tutorial Zoe shows you how to create a lion bust. For the purposes of this video she has used a rice cereal base covered in chocolate, but you could easily do the same methods over cake.

Hi, what recipe did you use for the rice crispy head? Also, what chocolate ganache recipe did you use & what method did you use to cover the rice crispy in ganache? What did you use to support the head while you decorated? How much of the modelling chocolate did you use?

Hi Gemma.. we have all the recipes and tutorials on cake structures within our Cake Academy. (www.sugarstreetstudios.com) Our members subscribe monthly or annually and get access to over 1100 cake videos that cover all of your questions and a range of different cake styles from illusion, carved, sculpted, wedding, tiered, novelty and additionally lots of recipes and cake business advice too! To answer the easy stuff I use a ration 2:1 with 50% dark chocolate and cream for my ganache. The RKT I tend to make by eye, so I melt the marshmallows and stir in the cereal until it is pretty compact. If I'm carving with it I don't tend to add butter. Hope that helps!

@@SugarStreetStudios Oh how I miss cake decorating company I will have to check out their rates to the states, To be honest I end up getting a lot of bits from Amazon or my small local shop, where I am in Texas they are only just starting to get into fondant cakes. and dont carry to much. There is one place in lewisville where I am going to take a Carla Puig class but not been there as it is 45 mins away. but they do carry saracino, its called All for your cakes. Oh how I miss my cake shops in London
