Chickpea Chorizo Soup - Pressure King Pro Recipe

  • Try this yummy warming Chickpea and Chorizo soup in your Pressure King Pro! You'll need:
    2 tsp olive oil
    1 400g can cherry tomatoes
    125g chorizo sausage, skinned and finely diced
    100g curley kale, shredded
    ¼ - ½ tsp Chilli flakes
    1 can 400g chickpeas, drained and rinsed
    600ml chicken stock with cube or stock pot.
    Lovely sour dough bread to serve
    Method
    1. Place the oil in the inner pot of the PKP and press the stew function, heat to count down and add the chorizo sausage, cook for 1 minute.
    2. Add the chilli flakes to taste and cook a further minute
    3. Add the tomatoes and stir, add the chickpeas, stock and Kale. Press cancel
    4. Close the lid and set the pressure release valve to closed. Press SOUP function and adjust to 4 minutes.
    5. Carefully release pressure and remove lid.
    6. Serve in bowls with sour dough crusty bread.
