My tips from trying this one: If you use a small ham (less than 10 lbs, lower the amount of zest and marmalade). As given, the citrus completely overwhelmed the flavor profile and I lost a lot of the smoked ham flavor that should lead the show. No need to try to get the glaze into the slices and avoid the temptation to add more glaze on the ham while it cooks…the caramelization will help temper the citrus. Naturally, if you are going for that heavy citrus punch, ignore me entirely!
Cap Ron…always appreciate your energy and presentation. This looks really good. I don’t know how to ask you a question off-topic, but how do you cook using a griddle on the BGE? I’m concerned about edge size on the half-moon planchas. I’d like to see some videos using the half-moon. Thanks

It actually works out really well. You just can't overload it with food....
