    For those who want to reduce plastic use, I've found that pouring ganaches, puddings, etc... into Tupperware or Pyrex bowls with airtight lids works better than plastic wrap because there won't be a film on top and you don't have to throw away a bunch of your ganache, pudding, etc with the plastic wrap.

    I tried the recipe with fresh grapefruit juice, even though it looks difficult, it is not so difficult when you make. And very nice and tasty. Easy to pipe after 30 min fridge. Thank you !

    I can't wait to try this! Are you able to freeze this ganache, and what's the best way to thaw it? In the fridge, and then at room temp? Does it retain the same consistency or does it need to be slightly reheated or whipped after thawing?

      As with any ganache, it is best used right away though you can store any excess in the freezer if you need to and then re-emulsify it to use it again like any other ganache :) I really recommend calculating your macaron fillings though, so you don’t need to store any extra!

      You can use fresh orange juice! However it will have a higher water content-using the concentrate helps increase the flavor without increasing the liquid :) But if your only choice is fresh OJ or if that is what you want to do, you can!

    Hello! Thanks for your videos, you are great 😊. Just a question: we need to refrigerate the macarons minimun one day for eating them right?My question is: when we eat them, the ganache it's "solid/hard? Or you recommend let them out of the fridge some minutes before?

      Like most desserts that you refrigerate or freeze, it’s a good idea to let them sit at room temperature for 10-30 minutes depending on the temperature of your room before you enjoy them :)

    Hi! I am from another country so I would like to know, the cream used in this recipe is like a table cream? heavy cream?

      Unless a recipe specifies a particular type of cream, you can always assume that “cream” means heavy cream!

    Would this recipe work if I changed the orange to mango purée and the zest to freeze dried mango powder?

      You could try! Freeze dried mango powder - in my opinion - is quite mild, so I’m not sure you would be able to swap the orange for mango in the same ratio and have a super strong ganache flavor. But its worth a try!

    Quick question, do you feel the juice concentrate needs sugar or is it just me that feels it is tarty/acidic with no sugar added ? :) Thank you!

      There is sugar added to this ganache recipe (and sweetness from the chocolate), so I do not think anything extra needs to be added to the concentrate!

    When I finish emulsifying the ganache and it’s ready to sit for a few hours, can I shorten that time by putting it in the fridge? I’ll wait for it to get to room temp before putting it in the fridge but I was wondering if there was a way I didn’t have to wait a few hours to use it?

      That is a great question! I really never put it in the fridge right away, so I can't tell you for certain. I have had another baker tell me that she tried that method to speed the cooling, and it ruined her ganache--though since I haven't done it, I am not sure if it would happen every time! It is up to you if you want to test it out :)

    Hi Maddie, I bought orange juice concentrate from the freezer section. It tastes bitter. Not like fresh orange. Shall I use it for this recipe? It won’t make the ganache bitter right?

      Well, it is concentrated orange juice 😅 I mean, macarons are all about personal taste preferences, and please be sure that your ingredients are all quality ingredients and not spoiled, but concentrated orange juice is exactly what this recipe calls for, and I used it for a reason. Remember that the orange will be mixed with a lot of cream and white chocolate!

    Great job as always..can i ask you my macrons turned right shape right feet BUT its dry on top when i toutch it it crack and saaaaame batter but in different oven it stik on the sheet and under bake can you please explain to me???? am shure its oven temp its 140 c when i made it 160c it coms dry and brown what can i do????sorry fo my poor language

      Thank you! Hmm 🤔 that is a good question! I think if I were in your situation, I would try three things: 1) slightly adjusting your temperature and time. 2) trying to bake on different trays and on different materials (example: use a different brand / different material of tray and instead of using a silpat try a teflon mat) 3) try a different method of meringue! If you have been using French, try Italian or Swiss etc

      ​@MaddieBrehm sorry, I know this is a while ago but I'm also looking for the MACARON recipe. The only recipe in the description is for the ganache (which I'm super excited about! 😊). Do you have the macaron recipe posted anywhere?
