"Sitār" is a beautiful, Indian instrument, which is different from the lovely, Iranian instrument "setār".
("Tār" means string in Indo-Iranian languages. That's why there are multiple instruments with "tār" in their names. The word "setār" is the origin of "sitār" and probably even the Greek "cithara", which "guitar" stems from.)
In the instrumental part of this piece, you're hearing Kayhān Kalhor's pizzicato on 'kamāncheh' (slightly to the left if you're listening with headphones), which is later played by a bow (kamāneh), Hossein Alizādeh's 'tār' (slightly to the right), and Homāyoun Shajariān's 'tombak' (percussion in the background).

"Eragh" is a "Goushea" (Means Corner) in Iranian music
As in Western music, there are major and minor modes. In Iranian original music, there are 7 "Dastgaah" (mods), each of which is like a country and its "Goushea (corners)" are like their cities.
You can use this Wikipedia page for basic information ... Good luck

And as far as I know, it refers to "Arak", a city in center of Iran, not Iraq ,the country. There are thousands of Iranians, with this in their surname, pointing to their home town.

"Erāq" (Iraq) is the name of a Gushe in Dastgāh-e Māhur (roughly speaking, a set of melodies in the Iranian equivalent of the major scale).
In ancient times, Iraq formed part of the core of Persia for about a thousand years. Ctesiphon city in Iraq, served as a royal capital of the Iranian empires for over eight hundred years. Our common, ancient, cultural heritage transcends the political borders.

And the message of its lyrics is so powerful, " Na az roomam, na az zangam, haman birange birangam, bia bogshai dar, deltangam", it means "I'm neither Roman (white) nor Zangi (from Zingebar- Black), I'm totally colourless, please come and open the door as I feel sad" just imagine this poem is written almost 70 years ago by Mehdi Akhavan Saales, when there was racial segregation was still there in the west.

Let’s put it this way. In Iranian music we have a part that is called “Avaz” which is improvisation of different melodies usually free of rhythm, we have other parts that have rhythm which can have vocals or no vocals at all. The special thing about Mohammadreza Shajarian is that he was legendary in Avaz and the way he improvised based on the poem. These parts are usually very long, about 20 minutes maybe. So in this track that listened to, you just listened to very small fraction of a long Avaz, which interestingly is a full album, “it’s winter”. This is a very unique album by itself. But it worth to note that in this track you have Shajarian that sings Avaz, and the instruments that instead of following him, playing a rhythmic piece. These innovations are done by Shajarian and his contemporaries in the past 50 years.

Kamanche is very similar to the violin, sound type, and how it's played at 4:45 you hear only Kamanche, but the artist is playing the strings with his fingers like a guitar. I think you have seen such a thing with the violin as well.
At 4:58 we can hear "Tar" and it becomes bolder.
5:33, now the artist is playing Kamanche in the normal way using the bow

Since you are interested I will give you a piece of information. TAR in farsi means string. So the main instrument in Iran is the Tar which has 4 strings. Evolved from that are other instruments such as Doutar meaning instrument with 2 strings. Dou means 2. Then we have the Setar which has 3 strings. Se means 3. Then there is the Sitar which is popular in India and has many strings. Si means 30 in farsi. We also have the Santour which they play with sticks and has nearly 100 strings. Santour derives from the word Sad Tar meaning 100 strings. I hope that makes sense.

I really admire your commitment to opening your soul to different cultures. We all should take the lesson and do the same. Specially, listening to and enjoying the legendary Mohamad Reza Shajarian's music is something that takes some practice and time, and you listen & seem to enjoy it even more than many Iranians that I know of (even though they still admire him). That's really impressive. I've seen a few of your reviews on his songs, and I think the ones you've been suggested are on the more hard core traditional side, which is a bit more difficult to get into right away. I have 2 suggestions for you that are less prayer-like (as you described some of them): "Yade Ayam" and "Tasnif Delshodegan". I put the link to the second one here, because when you search with this name, sometimes it shows other songs from the same Album: ruclips.net/video/CJ-ZSVLZs-A/видео.html
