My Nani cooks it in a very simple way and it's my fav since childhood... She just slice the tori in too thin not too thick semicircle slices and then without any oil she just add that to a kadai and cover the lid and after some time she adds some soaked chana daal and cook everything till completely cooked then she empty everything on a plate and then she prepare a tadka with some oil add some garlic ( very imp gives amazing taste) green chilies and onion saute it a bit and add her spices she doesn't add too much she just use some turmeric and homemade garam masala and coriander powder and then she adds the tori and cook for a bit and it's ready chana daal gives it some texture with the silky melty tori it compliments so well....that was my Nani's recipe pls do try it once. Turai kaafi paani chhodta hai to jyada oil ki zaroorat nhi hai..ccok it with oil then jeera n mirchi then turmeric and garlic paste in oil then turae , add salt , cover lid and leave it ... let it cook then check it after 10 min add jeera n black pepper powder n very little garam masala powder thats it... let it cook completely and no water retain in it ..thats it... I hope you will try this recipe and i guarantee that it is simple and tasty...

Bro that's literally nenua (sponge gourd) turai (ridge gourd) is different Both taste similar but the difference is torai has sharp edges while nenua is soft that is why it's not necessary to even peel nenua you literally chop them in thin slices, boil them with salt and shallow fry it in oil that's it you can add potato if u want and we cook both vegetables the same way the only difference is the peeling part
