    No need to deep fry ahead in advance as ridge gourd is a tender vegetable and doesnt take a long time to cook. U can do tadka and add the raw vegetable and let the flavour seep in. Keep it on sim for 15 min. And toss it one more time and let it stay for another 5 min. And done. U can also try variants with poppy seeds, cashew nut paste to elevate the taste

    ये सब्जी मेरी मम्मी बनाती हैं सिर्फ और सिर्फ इसमें मिर्च और लहसुन के तड़के लगते एक दम चुटकी भर रंग के लिए हल्दी बस 🙏🏻 इसमें इतना ताम - झाम करने की जरुरत नहीं हैं 🙏🏻

    Hamare ghar mey..we chop the vegetables Just onion .green chili n lil coconut salt.. Bas. No oil. Atall .fr almost all vegetables. Tha s goan style. Simple n healthy

    We cook it with garlic and Green chillies, the simple torai is the best, also we cook with karungi masala we specially make it at home, even that's delicious if some people like spicy.

    Bro we don't eat food only for taste but also for health
    And sponge gaurd is type of vegetable which could be eaten without adding so much ingredients like onion tomato spices because this is rainy season and at that time we could not digest this type of gravy vegetables. Not only sponge gaurd but also bottle gaurd , turoi and many vegetables could be eaten without adding any kind of spices . This donot only effect our digestive system weak but also invite many kind of health issues

    देसी घी मे अजवाईंन और जिंजर paste का तड़का के साथ टोमेटो और choped green chili डाल कर अच्छे से तड़का तैयार करे , नमक मिर्च हल्दी धनिया powder डाल पका ले, तोरी डाले और बिना पानी के प्रेशेर कुकर मे दो से तीन whistle लगा ले ऐसे सिम्पल और कम घी तेल के बनती है और गरम गरम रोटी के साथ बहुत tastey लगती है...

    Best way, ghee jeera ka tadka, add some salt , water and turmeric powder with water.
    Serve it with half lemon juice. It is just amazing

    My Nani cooks it in a very simple way and it's my fav since childhood...
    She just slice the tori in too thin not too thick semicircle slices and then without any oil she just add that to a kadai and cover the lid and after some time she adds some soaked chana daal and cook everything till completely cooked then she empty everything on a plate and then she prepare a tadka with some oil add some garlic ( very imp gives amazing taste) green chilies and onion saute it a bit and add her spices she doesn't add too much she just use some turmeric and homemade garam masala and coriander powder and then she adds the tori and cook for a bit and it's ready chana daal gives it some texture with the silky melty tori it compliments so well....that was my Nani's recipe pls do try it once.

    This vegetable is highly recommended to patients bcoz of there simplicity and original nutritional value... adding extra masalas to the vegetable make it a heavy dish and no more suitable for a diet having person🙅‍♀️⚠️⚠️so avoid spoiling every dish with so much masala and oil vgera😉😉

    My mom never use onion tomato garlic etc even not that a lot of spices she just make a tadka of heeng jeera and add haldi namak mirch in Tori let it cook then add in last lemon juice, one of the tastiest Tori made by my mom ❤❤❤❤

    Bhai ye sabji kaafi simple ban skti hai...
    Don't need to fry and Don't use tomato ....
    Turai kaafi paani chhodta hai to jyada oil ki zaroorat nhi hai..ccok it with oil then jeera n mirchi then turmeric and garlic paste in oil then turae , add salt , cover lid and leave it ... let it cook then check it after 10 min add jeera n black pepper powder n very little garam masala powder thats it... let it cook completely and no water retain in it ..thats it...
    I hope you will try this recipe and i guarantee that it is simple and tasty...

    Bro that's literally nenua (sponge gourd) turai (ridge gourd) is different
    Both taste similar but the difference is torai has sharp edges while nenua is soft that is why it's not necessary to even peel nenua you literally chop them in thin slices, boil them with salt and shallow fry it in oil that's it you can add potato if u want and we cook both vegetables the same way the only difference is the peeling part

    Turai is simplest recipe, just chop in small pieces add turmeric salt and cook simple itna masala is not needed it’s a soft sabji

    No need to do this much for tori ki sbji just add hing,panchforan,mirchi in oil and then add onion garlic with tumeric and red chilli powder and little bit of dhaniya powder and add Tori and salt.. cook it. And it's done and taste yumm 😋
