Basically the system is a bridge that cancels out the capacitance of the crystal holder. Then when the crystal is inserted, it becomes the dominant series path and its series pass characteristic rules. This shape happens to be sharp and have a deep null on one side that can be placed to cancel out part of the duplicated signal when mixed (detected) by a product detector.
