- While often called "stovetop espresso" the moka makes a coffee somewhere between espresso and an Americano. Done correctly, it yields a syrupy, intense brew. If it's bitter, you've done it wrong. Your grind needs to be slightly more coarse than that used for espresso. Ensure the vessel is pre-warmed. Using a separate kettle, bring water temp up to approximately 200°F. Fill the moka reservoir with the hot water up to the mark--no higher. Use enough ground coffee to heap over the filter by about 1 cm. Do not tamp. Ensure there are no stray grounds on the perimeter of the filter. attach the top portion of the moka hand tight. This will compress the grounds to the correct level. Place the moka on a medium heat source. Go by sound at this point. Remove from heat when you hear the reservoir boiling dry. The coffee in the top portion should not be boiling. It will taste terrible if it is. You can avoid this by lowering the temp of the heat source.
