  • @BruceLaVerdiere
    @BruceLaVerdiere 19 дней назад

    Hey Paul, everything you do is excellent by the way. Anyhow, my wife has some chicken already marinading in teriyaki. What would be your suggestion for this on the hibachi griddle? Would you cook it the same way? You are "adding" the sauce to unmarinated chicken in this video. Will it brown too much being already marinated? Thanks! Please do some updated new videos! I look all the time to see if you have posted. (We all know you are VERY busy!)

    • @thebackyardhibachi
      @thebackyardhibachi  15 дней назад

      I would bbq the marinated chicken. But if you wanted to cook it on the griddle I would cook it low and slow so the marinade doesn’t burn.

    Are you concerned about cutting on your griddle top being it’s rolled steel and not 3/4" stainless steel like at the restaurants? I know a lot of RUclipsrs recommend not cutting on it. Love the videos keep them coming.

    • @thebackyardhibachi
      @thebackyardhibachi  Год назад +3

      I’m not overly concerned about it. As long as your knife’s steel is harder than the grills steel (measured by the Rockwell scale).

  • @mrallan8063
    @mrallan8063 Год назад

    How safe is it to cut directly on the rolled steel flatop vs a commercial stainless steel flatop? I've seen other griddle channels say not to cut on the surface since it damages the seasoned coating. Does it actually damage the flatop or seasoning based on hour experience?

    • @thebackyardhibachi
      @thebackyardhibachi  Год назад +2

      In the restaurant we don’t season the grill and it’s a 3/4 stainless top. Cutting on that surface is a smoother experience. On rolled steel it’s not as smooth but it doesn’t harm the knife because the steel of the knife is harder than the steel of the griddle (measured by the Rockwell scale) As for harming the seasoning layer it’s less harmful than scraping/scrubbing the griddle. Both require proper technique in order to not harm the seasoning.
