This is the famous cake called a Lamington! Very popular here in Australia where they were invented.

Lamingtons were day old butter cake. An old staple cake that lasted longer than sponge. It soaked up the chocolate icing to create the moist shell. My mother used two forks to toss the pieces in the coconut.

Cool, never knew you guys ate them too. They originate in Australia where we call them “Lamingtons”, named after governor Lord Lamington (1896). One of our national dishes.

I was just going to ask if this is not lemingtons....but her chocolate coating thicker than the cocoa syrup we use for lemingtons.....thanks ...(colleen)
The best lamingtons are made by Foodland here in Australia - not sure who they get them from - but theyre big and the cake is SO soft!!!

opps sorry, the link was supposed to of been together with this. Yes, its a Lammington, earlier called Wellington, where it was invented. Very popular in both New Zealand and Australia.
Our sponge receipe, is somewhat different, much lighter and higher.
They are best left overnight to dry out and are cut through the middle, sandwiched together with whipped cream. They can be frozen without the cream. This can also be made as one large sponge cake.
Today, they are often made with jelly made with the 1/2 amount of water. (just a couple dpponfil of warm jelly in a soup plate, gently dipped on all sides and in coconut with the other hand and left overnight to dry. A little time consuming to cover first with jelly, but so much worth it. Delightful on any occasion - they are very light, have a delicate taste and don't weigh down your stomach. please try, you will love them!
