This was standard math. I was just wondering if he was suggesting any short cuts like the top number is easily 708 without calculating if you become familiar with duplicating, and the second line calculating you try to put the thought process in your head in terms of speed math with one digit multiplier. The whole point is to save time and use it for problems you have to think through in a test.
Man, I forgot so much of the "standard math" procedures over the years since I always had modified math and most schools where I live make you use calculator for quickness😭

What you are doing, is forming all possible multiplications of digit pairs between the upper number and lower number. Then you add them together, accounting for place-values along the way.
First, put aside the 6 in the lower number. Multiply 2*354. 2*4 is 8. 2*5 is 10 (carry the 1, put the zero in the answer). 2*3 is 6, and plus the 1 is 7. So our first row becomes 708.
Now get back to the 6 in the lower number. That really is 60, so put a zero in the ones place, and build the next number starting in the tens place.
6*4 = 24. Put down the 4, carry the 2.
6*5 = 30. Plus the 2 we carried before, gives 32. Put down the 2, carry the 3.
6*3 = 18. And plus the 3 we carried before, gives 21.
So our second row becomes 21,240
Add the two rows. We get 21,948 as our final answer.

How does the ( 2 ) became zero and the carry (1) became letter x?

The reason the 2 appears to become a zero, is that it is part of the problem 2 times 5. And 2*5 = 10. Only the ones place of ten gets written down below, which is a zero. The 1 in the tens place, gets carried to the next digit to the left.
Another way to do this, without carrying during the multiplication part, is as follows:
_ 354
x _ 62
_ _ _ _
_ _ _ 8: 2*4 = 8, no zeros to append, because we're multiplying a 1's place by a 1's place
_ _100: 2*5 = 10. Append a zero, because we're really multiplying 2*50
_ _ 600: 2*3 = 6. Append two zeros, because we're really multiplying 2*300
_ _ 240: 6*4 = 24. Append a zero, because we're really multiplying 60*4
_ 3000: 6*5 = 30. Append two zeros, because we're really multiplying 60*50
+18000: 6*3 = 18. Append 3 zeros, because we're really multiplying 60*300
_ _ _ _ _ _ add it up
_ 21948: our answer
