if you mean the sechuan pepper corns, they are bitter and tough. you only want the flavour, which is pretty distinct. i love it, i put them in everything... and i don't take them out of the oil. i really like them! but there are recipes where you can grind them up with other spices and use them as a rub for meat... goes well with duck or game.
Well, olive oil is not good for cooking hot dishes with. It should be a oil with a high smoking point, besides olive oil will affect the flavour of a dish. Secondly, the sichuan pepper corns basically is the star of the kung pao dish. It can be made without, but not recommended.
