Great overview of what you can do in Euroscope. This is great timing, as I'm about to/in the process of playing around and setting up Euroscope for my upcoming ATC training.
Do you mean the coastline thing on the radar display, because I thought that was on by default in the Edinburgh profiles, but could be wrong. Anyway you can turn on those regions in OTHER SET -> Display Settings... -> Regions, and it's the ones at the top that start with an "A-", there's 9 of them I think, so just tick all those for the whole UK, but usually you just need one or two depending where you are.

The vSMR plugin should work with any sector I think. I think the UK Controller Plugin (UKCP) is probably more geared towards UK stuff like SRD search and stand allocation etc, although stuff like the timer that's in it could be useful I suppose. I think you should be able to download it and try using it, but I don't know whether it would (at least not all) work for you because I think you need a key to connect to the API and stuff. I think at one point they talked about releasing just the generic features of it but I don't know if that ever happened.
I have one question tho. (I'm setting up for EDDM but I think should be an inbuilt function, no plugins) Of cause planes get tags on Ground. However, what about planes that have just spawned in and not received a squawk yet? When I log in they are just shown as planes without a tag and any information. So I have a hard time identifying the calling station as I don't see any callsign. Is there a way to set that up? I have seen a "tag" menu in the "other settings" but that looks quite complicated and I'm honestly a bit overwhelmed by that.
I don't know if EDDM profiles use vSMR (which is a plugin) to do surface tags, as the UK do? If they do you'll see that grey bar at the top with Display, Target etc in it. In the UK Pack, there are different profiles for that, one of which is called easy/obs or something, so you can change to that using 'Display' -> 'Profiles'. You can also individually 'Acquire' an aircraft using vSMR that isn't squawking using the 'Target' -> 'Acquire' button, then clicking on the aircraft blip. If you're not using vSMR or still having issues, just make sure your 'Correlation mode' in 'Other SET' -> 'General Settings' (towards the bottom) is set to 'Easy'. Hope that helps, like I say not sure what Germany uses.
