- OCTOPUS AGUACHILE - Our August Chef en Residencia is @hugo_gamin, a creator and storyteller with a completely unique way of infusing traditional Mexican recipes with classical techniques and twists to reconnect with the foods he grew up on. His riff on classic aguachile uses cooked octopus (don’t be afraid! It’s not that different from cooking pasta!) and a spicy, bright salsa verde ground by hand in a molcajete.
