  • Ingredients:
    For Marination:
    500g boneless chicken (cut into small pieces)
    2 tbsp cornflour
    2 tbsp all-purpose flour (maida)
    1 tbsp ginger-garlic paste
    1 tsp soy sauce
    1 tsp vinegar
    1/2 tsp black pepper powder
    Salt to taste
    Oil for deep frying
    For Sauce:
    1 tbsp oil (preferably sesame oil)
    1 onion (cut into cubes)
    1 bell pepper (capsicum, cut into cubes)
    4-5 green chilies (slit lengthwise)
    1 tbsp garlic (finely chopped)
    1 tbsp ginger (finely chopped)
    2 tbsp soy sauce
    1 tbsp red chili sauce
    1 tbsp tomato ketchup
    1 tsp vinegar
    1 tsp sugar
    Salt to taste
    1/2 tsp black pepper powder
    1/2 cup water
    1 tbsp cornflour (mixed with 2 tbsp water to make a slurry)
    Spring onions for garnish
    Instructions:
    1. Marinate the Chicken:
    In a bowl, combine the chicken pieces with cornflour, all-purpose flour, ginger-garlic paste, soy sauce, vinegar, black pepper, and salt. Mix well and let it marinate for at least 30 minutes.
    2. Fry the Chicken:
    Heat oil in a deep pan or wok. Once hot, fry the marinated chicken pieces until golden and crispy. Remove and drain on paper towels.
    3. Prepare the Sauce:
    In a separate pan, heat 1 tbsp oil. Add the chopped garlic, ginger, and slit green chilies. Sauté until fragrant.
    Add onions and bell peppers, stir-frying them for a couple of minutes on high heat to maintain the crunch.
    Add soy sauce, red chili sauce, tomato ketchup, vinegar, sugar, salt, and pepper. Stir well.
    Pour in 1/2 cup water and bring to a boil. Gradually add the cornflour slurry to thicken the sauce, stirring continuously.
    4. Combine:
    Add the fried chicken to the sauce, tossing everything together until the chicken is well-coated.
    5. Garnish and Serve:
    Garnish with chopped spring onions and serve hot with fried rice or noodles.
