UKs National Cream Tea Day Making Clotted Cream & Lemonade Scones

  • Join me to prepare for the UKs upcoming National Cream Tea Day, June 28, 2024, as I make quick scones and clotted cream!
    TO MAKE CLOTTED CREAM:
    Ingredients:
    250mL / 8oz heavy cream (ultra-pasteurized is OK)
    25g / 2Tb unsalted butter
    In a small saucepan, cook the cream and butter over low to medium heat, stirring frequently so it does not burn. You want to reduce the liquid to about half and it’s thick enough to coat the back of a spoon. Like custard. This should take about 20 min.
    Cool a couple minutes before pouring into a temperature-safe jar and refrigerate overnight. If it’s too stiff to spread when cold, leave it out a few minutes to soften.

    TO MAKE LEMONADE SCONES:
    Preheat oven to 430F/220C/gas mark 7
    Ingredients:
    2C / 300g Self-rising flour
    125mL / 1/2 C heavy cream
    125mL / 1/2 C lemon/lime soda (7-Up, Sprite, Squirt)
    Combine all in a large bowl and stir until combined into a dough. If too dry, add a little more soda, a teaspoon at a time. Handle gently. Toss onto floured surface and bring together into a 1” thick circle. Using a 2” /5cm cutter, cut out the scones with a firm downward motion, being careful not to twist the cutter as you push down.
    Place scones onto a parchment lined baking sheet, close enough to barely touch. Brush the tops of each scone with a little egg yolk for color.
    Bake in preheated oven for about 15-20 minutes.
    Eat warm with a little clotted cream and strawberry jam and a lovely cup of your favorite tea!
    These scones are even good next day!
    TO MAKE SELF-RISING FLOUR:
    Add 1 1/2 tsp baking powder and 1/4 tsp salt, per cup of all purpose flour.
    If using self-RAISING flour, that does not contain salt, add a 1/2 tsp salt to the full recipe.

      @sonyavs455 Yes I've made clotted cream that way. Doesn't always turn out perfectly for me. Maybe I've used a different cream or didn't reduce it enough.
      Those scones turned out well. I've heard of using lemonade in a scone recipe. I haven't tried it yet. I wonder if ordinary soda water would work too as it's the fizz you're after?
      (Late commenting today. I was watching a Thai street food seller making banana roti's (pancakes on live stream. I might have a go at making them myself in the future.)

      @@Poliss95 I do think soda water would work - for the fizz - but the flavor might be a tad flat. Not sure about that. Might be a good choice for fruit scones!

    My Mom's Mock Devonshire Cream:
    Chill bowl & beaters very well. Whip:
    1/2 pint whipping cream
    1 Tablespoon sour cream
    3 Tablespoons Confectioner's sugar.
    Mix well; be careful not to overdo it. Keep refrigerated.
    PS:
    Jam 1st - Cornish way
    Cream 1st - Devonshire way
    Cream 1st, jam 2nd, cream 3rd, 4th, & 5th - MY way. 😊

    Thanks for these recipies! Will try them both with my favorite, Twinings Earl Grey. I have made clotted cream the slow way, but it is just not the same with American cream and does not make very much for all the effort. I also love that you know English teas, so many people do not know the differences in cream tea, afternoon tea and high tea. I will be watching your channel in the future! 😊

    Love your channel. Butter then jam is my wife's way. We generally have scones at Sunday morning breakfazt.

    Mine is a “scone cream” recipe. A quart of plain nonfat yogurt, into a cheesecloth lined strainer into a bowl to catch the drippings, overnight in fridge. Toss the liquid. Whip 1/3 cup whipping cream with 3 tablespoons powdered sugar, then add the yogurt.

    Great recipe for clotted cream! I have a recipe for 7-up biscuits that looks a lot like this one. If you wanted more lemon flavor, adding some lemon zest and maybe a couple of teaspoons of juice would be great (?) -- along with serving with some lemon curd! They look wonderful, and I really want to try that clotted cream recipe. In this heat, I have no interest in keeping the oven on at ANY temperature for 12 hours! Thanks for sharing this recipe!     Thanks for this! Although I usually make clotted cream by putting the non ultrapasteurized heavy cream in a 360⁰oven, turning it off when it goes in for 12 hours, then 12 hrs in fridge; this I will try!!! It looks delicious! Thanks for your time. Also will try those scones as well! Thank you from Lubbock!

      @@tamitarekolayan9918 I have never made scones with almond flour but I know you would have to be careful of its heaviness. You might try halving it with regular flour to give it some lightness. But that’s just a guess. I think if you Google scones with almond flour, several options will pop up! Good luck! 😊✨
