You always see the Josper ovens at those amazing little local restaurants in Barcelona - the meat is always so juicy, and the fish and potatoes and all the little smoky gratins they pull out of there, nonstop. You can buy a home version of these but unless you are building a mansion from scratch, it’s gonna be a challenge. Unless some brilliant British guys design a practical outdoor version, so that a suburbanite has a viable path to having a professional charcoal oven to play with at home. Brilliant product. Looks great too. I hope you make a fortune.
Just close the vents down. It is easier to get the temperature to go up than go down. It's because of the thermal mass of the steel shelves and the oven chamber. Happy cooking

Great idea and looks fantastic quality. But the price is a bit of an off put. Maybe once I win the lottery 😂
Love my Charlie Oven...... However, If I get to, say, 200 degrees but then want to bring the temperature down how can I do this?
