While I agree with you that this holds up pretty well, the container of Spring Mix that we buy is so large that with just the two of us, I find it difficult to eat completely before it starts to go bad. This is exactly the way that I most often cook fresh spinach and I thought this might work. Now with your video I can be assured. Thanks again.
Hi Kate! Thanks for watching and asking your question! Yes, lettuce can be sauteed too. Since full-grow lettuce is crispier than the baby greens, they may cook up a little differently, like needing just a little more time to soften. Try it sometime and let us know how it comes out :)

However, some nutrients (especially fat-soluble nutrients) can also be absorbed and utilized better after being cooked. The key with cooking greens like Spring Mix while preserving as many nutrients as possible is to cook them quickly in as little liquid as possible. Then consume the liquid if you want (in the South, it's called "pot liquor" and usually consumed with the meal). I can assume that Spring Mix is most often consumed raw, but some people prefer to cook them, and this gives a quick and easy way to do that, and it's a way that preserves as many nutrients as possible. Organic coconut oil is the best oil to cook with. Olive oil is not good for cooking.
